The difference in hard and soft bounces found in sent email tracking reports is that a soft bounce is a temporary failure being reported by recipient's server (example: mailbox full), whereas a hard bounce is a permanent failure being reported by recipients' server (example: recipient's email address is no longer valid).
Notes
In general, 3 consecutive hard bounces on 3 separate emails will result in the contact being changed to a held status in your account.
